Let's block a volunteer who's away. From Events, open the Schedule Grid and click the volunteer's dot for that Sunday. Choose Mark unavailable. It blocks every service that day. The cell turns gray. Nobody can schedule them there now, and Auto-fill skips them. If plans change, click the cell again and choose Make available.
